Red cabbage is a good side dish for most pork dishes. it is often served with pork schnitzels or roast pork.
My 5 year old grand-daughter loves it with any dish and it is a vegetable after all.
Ingredients
- 1/2 head of red cabbage
- 1 small onion
- 3 tbsps oil or butter
- 2 strips of bacon
- 1 – 2 cups chicken broth
- 1/2 cup sugar (quantity will vary with taste)
- 2 tbs vinegar
- 1 cinnamon stick
- 1 bay leaf
- salt and pepper to taste
Recipe:
- Finelly chop the onion
- Slice bacon into small cubes
- Remove the core from the cabbage (the white part in the center) and cut into fine strips
- In a medium size pot melt butter or heat oil
- Cook chopped onion on medium high until translucent (about 2 minutes)
- Add bacon and cook for another minute
- Add red cabbage, 1 cup of chicken broth, cinnamon stick, bay leaf and 3 tablespoons of sugar
- Cover the pot and simmer stirring occasionally for an hour or until cabbage is soft and easily pierced with fork.
- Add vinegar and cook another 10 minutes
Notes:
The amount of sugar and vinegar depends greatly on taste. Keep tasting it along the way until it is to your taste.
No worries about cooking it too long the cabbage should be soft and tender when served.
Adding vinegar at the end will brighten up the color.
