When trying to improve healthy eating habits, I try to use whole wheat as much as possible. These pancakes have now become Sunday morning tradition enjoyed by 3 generations.
Ingredients:
- 1 cup whole wheat four
- 2 tsp sugar
- pinch of salt
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1 cup buttermilk
- 1 egg
- Butter for greasing the pan
Directions:
- In a medium bowl mix all dry ingredients (flour, sugar, salt, baking power and baking soda)
- Wisk together 1 cup of buttermilk with one egg
- Combine dry ingredients with buttermilk mixture and mix well (some small lumps are ok)
- Melt butter in non stick frying pan on medium low heat
- Spoon pancake batter in the pan when it is hot
- Flip when bubbles appear on the sides
- Serve with maple syrup

Small pancakes work as a perfect size for 5 year old grand-daughter
