Growing up in Slovakia, some kind of recipe with cabbage and potatoes was on the menu at least once a week. Having access to better ingredients, I have enhanced this traditional soup, adding more meat and smoked sausage.
Ingredients:
- 1 small onion
- 2 cloves of garlic
- 1/2 head of cabbage
- 1L chicken broth
- 70 g smoked meat (I use smoked farmer sausage)
- 200 g pork or chicken
- 2 potatoes
- 1 bay leaf
- 1 tsp Vegeta (optional)
- 2 tbs vinegar
- 2 tbs cooking oil
- Salt and pepper
Directions:
- Chop onion and garlic
- Cut sausage and meat into medium sized cubes
- Core and shred cabbage
- In a large pot, heat oil on medium high
- Add onion and cook for few minutes until translucent
- Add garlic, cook for a minute (Do not let it go brown, it will turn bitter)
- Add sausage
- Add meat and brown on all sides
- Add salt and pepper
- Pour in chicken stock
- Add cabbage, bay leaf and vegeta
- Cube and add potatoes
- Cook for about an hour. Potatoes and meat will be cooked through and cabbage will turn soft)
- Add vinegar and season again with salt and pepper to taste
- Serve with rye bread (optional)
Notes:
Beef can also be used, but substitute beef broth.
